Chinook Salmon

Chinook salmon is the largest species of pacific salmon. This king fish is rich in fatty oils and flavour and can be a little more forgiving to cook. This fish is excellent for grilling on the BBQ.

Coho Salmon

Coho is the most versatile of salmon species, balancing out somewhere in the middle. Great for poaching or pan fried in a light coat of oil.

Sockeye Salmon

Sockeye is one of the most prized species of salmon in the Pacific. This salmon has a firm texture, bold flavour, and rich colour. No need for complex sauces on this fish. Keep it simple, delicately steamed on a cedar plank. Be careful not to overcook this species of salmon.
